Between autumn and spring,  I have my “inventing new flavour/texture combinations” hat on which is what I loooove doing and one of the main reasons I started this business. 

One question I’m asked all the time is: how do I come up with these combinations? There’s no single answer, but the thought process is usually the same.

Firstly start with the ice cream/sorbet and flavour/style of dessert, then I started to think about the flavours and textures that would complement said dessert. This could be in the form of a cake, biscuit, crumb, meringue, salted caramel shards etc. 

In April 2026 I introduced a new menu that has been carefully thought of, so that it would not just be crowd pleasers, but stick to the heart of giving you and your friends, family, guests or colleagues a Deliciously Different experience.
